How to prepare Quince Paste Cheesecake?
  1. We start by melting two tablespoons of butter in the microwave. We take about 20 cookies and crush them by mixing them with the melted butter. We mix and the resulting mass we place it in the bottom of the mold that we are going to use. We press well to make a block as compact as possible.
  2. In a saucepan over the heat, place the fresh cheese, the zest of half a lemon, the cream and the sugar. Let it simmer to mix everything well and remove.
  3. Dilute a teaspoon of jelly in a little water and add to the cream cheese. Let cool completely and pour over the biscuit base. Reserve in the fridge for about two hours. After that time, we crush the quince paste in a blender and put the resulting mass in a saucepan over low heat. Stir until a homogeneous cream remains.
  4. We covered the cheesecake that was in the fridge with the quince paste. Let the quince paste cool and put it back in the fridge. We leave until it is completely curdled and that’s it!
